I’m basically looking for information or a simple recipe on how to brew smaller 2″ apples into a cider. They’re slightly bitter apples…

You need a cider press to make cider.You do not brew them.

    You “press” cider, you do not “brew cider.
    An elderly gentleman that I know suggests that you mix different kinds of apples in the press. Given yours are a little bitter, you may want to ad some sweet ones to the mix? Any variation from mix to mix is what establishes the unique tastes. His is ALWAYS out of this world!
