visit dundeebrewing.wordpress.com & www.17brewcrew.com Applejack is a strong alcoholic beverage produced from apples, popular in the American colonial period.[1] Applejack was historically made by concentrating hard cider, either by the traditional method of freeze distillation or by true evaporative distillation. The term applejack derives from jacking, a term for freeze distillation.[1] The modern product sold as applejack is no longer produced using this traditional process. Freeze distillation is a low-infrastructure mode of production compared to evaporation distillation. Apples and applejack have historically been easy to produce in small quantities. Hard apple cider was an important drink in the colonial and early years of the United States, particularly in areas without access to clean water, but was often considered insufficiently palatable and bulky to store. Rather than consume an alcoholic fruit beer, the cider harvested in the fall was often separated in the winter via freeze distillation, by leaving it outside and periodically removing the frozen chunks of ice, thus concentrating the unfrozen alcohol in the remaining liquid. From the fermented juice, with an alcohol content of less than 10%, the concentrated result contains 30-40% alcohol, is slightly sweet and usually tastes and smells of apples.     the ABV won’t get that much higher as you will reach a point? where the applejack will no longer freeze in your freezer. what you could try though, is to get some dry ice and try to freeze distill in an insulated container (chilly bin) filled with dry ice lol. I think brew dog would probably use something a whole lot colder than your freezer/alter the pressure.

    Hi matey, you can repeat the process, as I? know that the brewdog brewery in scotland do this to make beer up to 41% ABV. So far however, I’ve only ever done a single freeze. cheers

    40%ABV mixture of pure ethanol/water freezes@ ~-23C. if u assume your mixture is pure ethanol and water, and it doesnt freeze when u put it in your freezer at -23C, you can say it is 40%. However, the sugar and methanol (and possibly other stuff) which r concentrated when u freeze distill, lower the freezing point of your mixture, limiting your maximum ABV to far below 40% (i know, its a wide margin). Also, lots of the ethanol remains in the ice which is y? u got less final volume than expected.

    Hi matey, adding the? fermentation stopper and preservative is really just personal choice, and depends on how you are going to be storing and using your Applejack. If you intend to put it into glass/wine bottles, I think it is a sensible precaution. I made a batch before this one, and didn’t put the chemicals in, even at 24% ABV it was still fermenting after the freeze concentration when the temperature rose again. Luckily that one was plastic bottled.

    Is it entirely necessary to add preservatives, to the hard cider, to stop the fermentation process when making apple jack? Seeing how it’s going to be frozen? then drained, wouldn’t the alcohol content of the final product be great enough to cease further fermentation?

    I’m just asking other applejackers for safety reasons. I’m thinking about starting a small business in applejack. My method is brewing my cider as strong as possible. I think yours in the video was 8%. I like to get mine to 12-13%. And, I like to? wait until all the color is gone from the ice, jacking it by about 1/3. That should leave about 16-18% abv. This way I don’t worry about making people sick. Still pretty strong, like port or sherry. Then I infuse the brown sugar. Thanks for the info.

    Hi TenderTrap, thanks for your comment. Do you add the brown sugar as a fermentable to brew the cider or use it to back sweeten afterwards before freezing? As far as hangovers? or headaches are concerned, I really only ever have a couple of shots of applejack at a time, as I am usually drinking home brewed beer as well, so cant comment from personal experience that it gives bad hangovers. However, its possible it might give marginally worse ones..as you say, methanol & fusel are conctentrated too

    Hi. I’ve also been making applejack for a while. I’ve found adding brown sugar makes applejack irresistable. My friends love it. But, I wanted to ask you if you or anybody else has had any noticably bad headaches or hangovers from perhaps drinking too much. Everybody I know who’s drank it hasn’t had any porblems, but I still do worry about concentrating the bad alcohols to unhealthy levels, even after all my research. I’d appreciate the feedback. ?

    Hi mate, the final liquid does contain some methanol…but no more than was started with. For instance, if you drink 2 litres? of apple cider…you will be drinking methanol, ethanol and fusel alcohol. If you freeze that 2 litres and then drink the resulting concentrated liquid..you aren’t drinking any more methanol than you would have if you just drank the 2 litres of cider. my freezer uses -23C, but you could freeze at anything below 0C, might take longer though.
